Lemon & Coconut Cookies

Makes 12 
Low GI


1/3 cup Coconut Flour

1/3 cup Coconut Oil (melted)

1/4 cup Coconut Sugar

2 eggs

1 tsp vanilla essence

1/4 tsp salt

1 tsp (heaped) zest of a lemon

2 tbsp. desiccated coconut



1. Prepare baking tray and preheat oven to 180°c

2. Combine flour, oil, sugar, vanilla, eggs and salt into a bowl. Continue to stir until flour absorbs all liquid and a dough forms.

3. Fold zest into dough

4. Evenly divide and place dough on prepared tray and place in oven for 12-15 minutes.

5. Allow to cool for 10 minutes before transferring to wire rack to cool completely.
