Chilli  & Basil Pasta

10 Mins Prep, 20 Mins Cooking time


- 2 onions
- 1 fresh chilli (long or 2 short) sliced very fine
- 1/2 cup fresh basil finely chopped
- 4-5 large ripe tomatoes diced (can tomatoes are ok but fresh ripe ones taste so good)
- 1 clove garlic crushed
- 1 tsp salt
- 1 tsp Sugar (I use coconut sugar for low Gi)
- 1tsp pepper
- 1tbsp. olive oil
- 25grams of butter
- 2 cups of dried pasta of your choice
- 5 cups of water to boil pasta
- Parmesan cheese for sprinkling on top (optional)


It's easier to make sure all your ingredients are chopped or diced as required before starting and out on the bench.

1. Add to a large saucepan or pan the olive oil, diced onion, sliced chilli and crushed garlic, add salt & pepper, Cook until onion becomes soft add tomatoes and sugar and basil, cook until it begins to boil. Then add the butter, turn heat to low and simmer for 15 minutes.

2.  While sauce is simmering boil water for your pasta, once it begins to boil add pasta, turn to a medium heat and cook for 10. - 15. Minutes (use packet instructions as a more accurate guide).

3. Once the sauce has been cooking for the 15 minutes turn off until pasta is cooked. Once pasta is cooked drain in colander and serve with sauce on top. You can add some Parmesan or other cheese if you like.
